Roasted Vegetables with Sesame Seeds


Nutritious and delicious, this recipe can be made in a snap and be turned into a main meal or used as an accompaniment.

Serves 4-6

Ingredients
250g pumpkin
500g new potatoes
300g sweet potato
1 large red capsicum
1 tbls honey
2 cloves garlic, crushed
2 tbls sesame seeds, toasted
1 tbls fresh rosemary sprigs
8 small or pickling onions, peeled
1 tbls olive oil
Cracked black pepper

Method
Preheat the oven to 200°C. Peel the pumpkin and sweet potato and cut into large pieces. Remove the seeds and membrane from the capsicum and cut into large pieces. Toss the prepared vegetables together with the potatoes and onions in a large baking dish. Drizzle with the combined oil, garlic and honey and toss to combine. Bake for 30 minutes or until the vegetables are tender. Remove from the oven, and sprinkle with sesame seeds and rosemary sprigs.
Season with cracked black pepper.
